The cask in its first use can be quite active, and will secrete its flavors into the whiskey at a very fast rate.

The more you use it, the more you will "tire" it and you can age the whiskey in it for a longer time without it absorbing flavors from the wood which are too strong.

We recommend seasoning the barrel with alcoholic beverages with a low alcohol percentage (below 15%), do not to leave them in the barrel for more than a month so that the drink does not spoil.

You can leave drinks with a high alcohol content in a barrel even for several months. It all depends on how strong you want the flavor of the barrel seasoning drink to be felt.

Since the volume of the barrels is relatively small compared to regular sized barrels, the whiskey in them will age at a much faster rate.

In just a few months the barrels will bring out flavors in the whiskey that can take years in regular sized barrels.

The "part of the angels" is a phrase that describes the percentage of liquid that evaporates from the barrel during one year.

The combination of the heat of the Israeli land together with the small volume of the barrel leads to the fact that in one month the "angels" may drink around 8% of your whiskey.

For comparison, in Scotland in normal sized barrels the average annual evaporation is between 1.5% and 2%.

The alcohol percentage of the distillate when it enters the barrel is 60% alcohol.

This is the ideal percentage for aging whiskey but for most people it will not be ideal for drinking.

You can lower the alcohol percentage in 2 ways:

The first is to add water to the whiskey.

It doesn't matter if it is mineral or tap water, it is important for the water to be at room temperature.

Add water gradually and taste along the way until you reach a percentage that will be pleasant for you to drink.

The second way is to drink the whiskey with ice.

Like water, ice will dilute the alcohol content of the whiskey but it will also add a cooling effect.
